Hooray for the Christmas season! It brings with it so many glorious traditions,
family time, and special treats—they all go so well together, don't they? This
weekend, my son Jared whipped up a Lynton family favorite and shared it at our
Sunday dinner. It's simple to make, but utterly decadent and as minty and green
as the holidays themselves. If you've never tried Chocolate Mint Chip Ice Cream
Cake, give this one a go. You'll be SO glad you did!
Needed:
9x13 cake pan
1 gallon of chocolate mint chip ice cream (you won't use it all; you can also use peppermint candy or starlight mint ice cream)
2 large packages of chocolate sandwich cremes cookies (I use Oreos)
2 regular bottles of Hershey's chocolate syrup (may substitute fudge ice cream topping, depending on your preference)
Simple steps:
First, set the gallon of ice cream out to soften so it will be easier to spread. This is a six-layer yum, so you'll create six simple layers.
Crush the first package of chocolate cookies and spread the layer of crushed cookies on the bottom of the pan.
Add a second layer by pouring or spreading the syrup evenly to coat the cookie layer.
Create a third layer —this one of chocolate mint chip ice cream.
Your fourth layer is another large package of chocolate cookies, crushed.
The fifth layer is your second bottle of syrup or fudge.
Top it all off with your sixth layer: an even sprinkling of finely chopped walnuts.
Then allow the entire concoction to harden in your freezer overnight—it will be tempting, but you can wait! I absolutely love this dessert and so does my family (check out Ashley savoring her slice!).

Pumpkin chocolate chip cookies! All you need is a box of spice cake mix (just the powder - not prepared cake mix), a can of pumpkin, and milk chocolate chips! Mix ingredients together and drop onto an ungreased cookie sheet with an ice cream scoop. Bake at 350° for 10-12 minutes or until the cookies just start to get brown!

This year I'm giving it as neighbor gifts packaged in our new Cricut Art Philosophy take-out boxes. Yay!

When serving, add a dollop of coolwhip and of course more chocolate fudge sauce. Just love this recipe and wished peppermit ice cream was available all year long - not just a Christmas time.

I will have to make it when we have a lot of company over so I won't be tempted to! Thanks so much for sharing! As for a favorite recipe my mother made these powder sugar balls with a cookie center that just melted in your mouth. Can't remember what they are and she can't find the recipe!
ReplyDeleteSo I am going to share my all time 2nd favorite- Crepes
Basic Crepe Batter
13 ounces evaporated milk (PET)
3/4 cup water
4 eggs
1/2 tsp. salt
1/4 cup un-salted butter,melted
1Tbs. sugar
1 and 1/2 C. flour
Blend all in a blender for 1 1/2 minutes at medium speed. Let sit in the refrigerator (covered) overnight ( you could wait 3 hours but you really want to let it sit longer to get all of the bubbles out of the batter). You can gently stir it if you want before making the crepes.
Desert crepes: fill with fruit preserves, pie filling, etc. roll with powdered sugar and garnish with whipped or sour cream.
For savory crepes you can add other herbs and spices after blending the first ingredients then after you make them- fill with chicken, seafood, etc.
For my favorite desert filling or any questions: you can email me for that if you want. Lauraleelien at yahoo. Hope you like it as much as we do!

One of my favorite holiday traditions is making cookie trays each year with my church. One of the easiest treats I make to go on these trays are Pecan Crunch Peanut Butter Cups. The recipe is extremely easy! You will need the small paper cupcake cups, a large bag of chocolate chips or melting chocolate, a jar of creamy peanut butter, 1 teaspoon shortening, 1/4 tsp. vanilla, 1 bag of chopped pecans, powdered sugar.
ReplyDeleteMelt the chocolate, put in a teaspoon of shortening and the 1/4 tsp of vanilla.
In separate bowl, mix peanut butter with powdered sugar to your taste.
Pour melted chocolate into small paper cupcake cups to cover bottom of cup. Add a small dollop of the peanut butter mixture and then cover with more melted chocolate. Add chopped pecans to top it off.
Chill until firm. You will have the most delicious peanut butter cups you've ever tasted! Better than Reese's!

We always have ice cream punch at Christmas. I tried to omit it one year, and there was mutiny! lol! The punch is made of 1/2 gallon vanilla ice cream, 1/2 gallon raspberry sherbet, 1 12-oz. can grape soda, and 2L lemon-lime soda or ginger ale. Mix it all together and enjoy the creamy goodness! For easier mixing, let the ice cream and sherbet soften a little before putting the punch together.

As the mother of two boys, I was overjoyed with the gift of 2 beautiful grandaughters. Every Christmas since they were quite small, we bake and decorate many batches of good old cut out cookies. We look forward to it every year. Our oldest requested a red kitchenaid mixer for Christmas last year and got it. So we get to use it this year. Merry Christmas CTMH, keep up the good work. The last catalog was the best ever, hope you can top it in 2012!
ReplyDeleteAt Christmas time, my mother used to always make Fudgie Scotch Ring: Melt 6 oz pkg Semi Sweet Chocolate chips, 6 oz pkg butterscotch morsels, and 1 can Eagle Brand milk in top of double boiler over hot water. Stir occasionally until morsels melt and mixture begins to thicken. Remove from heat, add 1 cup coarsely chopped walnuts and 1/2 teaspoon vanilla extract. Blend well. Chill for about an hour or until mixture thickens. Line bottom of 9" pie pan with a 12" square of foil. Place 3/4 cup of walnut halves in bottom of pan, forming 2" wide flat ring. Spoon chocolate mixture in small mounds on top of walnuts to form a ring. Decorate with 1/4 cup walnut halves. (looks like a wreath.) Chill until firm enough to slice... cut into 1/2 inch slices.
ReplyDeleteEasy peasy and very delicious!
My favorite part of the Christmas Season is making cookies. Some to share and some to eat! Sugar cookies are my all time favorite. Not because of the cookie itself, but because of the cookie cutters I use. I've used the same cookie cutters since I was a child and although my daughter is very small, someday she will be able to help me make cookies and share my memories with me. Each year, I look forward to reaching for that bag of cookie cutters because I know Christmas really has arrived. That little bag of cookie cutters holds the warmth of Christmas pasts, the excitement of Christmas present and the anticipation of Christmas' to come.
ReplyDeleteBaklava! I cheat and soak several layers in small amounts of olive oil instead of brushing individual phyllo with butter. Looks the same, tastes the same, and it always gets rave reviews!

Christmas Crack:
ReplyDelete1 cup unsalted butter (no margarine allowed)
1 cup brown sugar
2 cups semi-sweet chocolate chips
40 saltine crackers
Preheat oven to 350ºF. Line jelly roll pan or cookie sheet with foil and spray with non-stick spray. Lay a flat layer of crackers out on the foil. Melt the sugar and butter until a boil is reached. Reduce the heat and simmer, uncovered, for 5-6 minutes or until mixture is thickened and sugar is completely dissolved. Pour this mixture over the crackers and spread to coat evenly. Bake for 5-8 minutes, or until the toffee becomes bubbly. After removing the pan from the oven, let it sit for 3-5 minutes. Sprinkle on the chocolate chips, let them soften and melt, and then spread them into an even layer. (You can add nuts, cracker crumbs, or whatever else floats your boat at this point.) Let cool and, if desired for expediting purposes, refrigerate until hardened. Break into pieces the size of your choice. I personally prefer a hand-sized chunk.

Our favorite holiday tradition is a day full of candy making with my mother about a week before Christms! We typically start at 8am and don't finish sometimes until 7 that night.. Peanut Butter Fudge...Homemade caramel..Peanut Butter Buckeyes..toffee..Oreo Truffles.. But the best treat we make at least 5 batches of a year is Oven Made Caramel Popcorn! So easy and tasty - makes a great gift packaged up in a cellophane bag with a pretty bow! So...I am sharing this delicious treat!
ReplyDeleteOven Made Caramel Corn
6 quarts air-popped popcorn
2 cups brown sugar
1/2 cup light corn syrup
1 stick butter
1 tsp salt
1/2 tsp baking soda
Preheat oven to 250 degrees, spray a disposable oven roasting pan with nonstick cooking spray. Place air-popped popcorn in pan and into oven to keep warm and crisp while making the syrup. In a heavy 2 quart saucepan combine all ingredients EXCEPT baking soda over medium heat. Cook, stirring frequently until it comes to a rolling boil. Boil for 5 minutes, remove from heat and quickly stir in the baking soda. Mixture will foam. Quickly pour over popcorn and stir well. Bake for 45-50 minutes stirring every 15 minutes. Cool and break into large pieces.
My mom has made this recipe for countless parties, and now my sisters and I use it as our go-to party/pot-luck favorite. It gets rave reviews every time we make it, and is so easy - no cooking required and it's best if made the night before.
ReplyDeleteCheese Ball
2 - 8 oz pkgs original cream cheese (softened)
1 - 8 oz can crushed pineapple (well drained)
1/4 C. green pepper
1 Tbsp. onion
1 Tbsp. garlic powder
pecans or walnuts (chopped) use as many or as little as you want
Mix everything together (*except nuts if you choose). Form ball and chill (I usually put it in the fridge overnight so the flavor melds).
Note: You can add nuts to the ball mixture so the entire ball will be crunchy, and/or you can put the nuts on top of the ball...this works best if the ball is chilled first (I usually do it this way to get a crunchy outer layer and cheesy inner layer).
It's easiest to move the "ball" around as few times as possible. Mix everything in one bowl, and then shape it (use a spatula) in the center of your serving platter, chill it, then add nuts to the ball the next day (or immediately if the ball is slightly sticky)...then just add crackers around it in a circle.
A co-worker shared these last week. They are so easy to make and will become a new tradition at Christmas.
ReplyDeleteSugared Cranberries (beautiful and delicious)
Bring 2 c. water and 2 c. sugar to a simmer. Remove from heat and add 2 c. cranberries. Cover and place in refrigerator overnight. Drain (save juice to use as a sweetener in other things) and roll the cranberries in fine sugar. Spread on a cookie sheet and let dry for 2 hours.
BAKED FRENCH TOAST
ReplyDelete1 (1 pound) loaf French bread, cut diagonally in 1 inch slices
8 eggs
2 cups milk
1 1/2 cups half-and-half cream
2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
3/4 cup butter
1 1/3 cups brown sugar
3 tablespoons light corn syrup
Directions
Butter a 9x13 inch baking dish. Arrange the slices of bread in the bottom. In a large bowl, beat together eggs, milk, cream, vanilla and cinnamon. Pour over bread slices, cover, and refrigerate overnight.
The next morning, preheat oven to 350 degrees F (175 degrees C). In a small saucepan, combine butter, brown sugar and corn syrup; heat until bubbling. Pour over bread and egg mixture.
Bake in preheated oven, uncovered, for 40 minutes.
I love how the aroma brings the family to the kitchen! Merry Christmas
My family loves Cheese, so we make a cheese dip that always goes over well. Take 2 packages cream cheese, soften to room temp, mix with a few spoonfuls of sour cream, to desired consistency. Mix in 2-3 sliced green onions( use white and green) then add sliced chipped beef (Hormel brand in a jar is the best! Usually found by the tuna fish)Mix and serve with crackers... the flavor gets better if it sits for a few hours before serving.
ReplyDeleteI found something new that I will be making for years to come! Oreo Truffle Balls! These are so easy to make and you can have all your kids help out with this one!
ReplyDeleteOreo Truffle Balls
In a large bowl mix a small pkg of instant chocolate pudding and a 1/2 c. of milk until well blended. Add one pkg Oreo cookies crushed fine. Roll into 1 inch balls and freeze 10 minutes. Melt 10 squares of Bakers chocolate, dip balls and let cool. We melt a little white almond bark and put it into a small zip lock baggie, cut the corner of the bag and use as a pipping bag to make a zig zag on top of each ball. These freeze well and look great in little mini cupcake liners!

Mt favorite family goodie is a Milky Way Cake. Take a yellow box cake mix and mix as directed (just follow the directions on the box). Buy 3 milky way bars. Dice/chop 2 of the candy bars up and melt them down. Pour the cake mix into a bundt pan. Once the two bars are melted down you drizzle it into the bundt pan. Don't force it down or it will sink and stick to the bottom - you want it swirled throughout the cake. Bake the bundt cake per the box mix instructions. Once the cake is baked and cooled take the 3rd candy bar and melt it down (like before) and then drizzle it over the top of the finished cake. That's it - easy peasy! This cake is moist, delicious and takes like milky way bars!

I love making this whenever I host a party, because it's fast and easy to put together. So here's my recipe for Coffee Punch (I know it's a punch and not a dessert, but it's good).
ReplyDelete2 quarts water (8 cups)
8 heaping tps. coffee grounds.
1 1/4 cups sugar
2 (12 oz.)cans evaporated milk
1 tsp. cinnamon
1 gallon vanilla ice cream
Brew coffee. Pour into bowl and stir in sugar. Add ev. milk, cinnamon and 3/4 of ice cream. Just before serving add the remaining ice cream. For a smoother texture we like to put the cinnamon in with the coffee grounds when we brew the coffee.
I love to make chocolates and cookies for Christmas. My easiest one is to make Chocolate Mint cookies. You melt a bag of Andes Mint chips and dip in Ritz crackers. Place on waxed paper to harden and enjoy. Tastes just like Mint thins from the girl scouts. My kids and grandkids just love these.
ReplyDeleteI actually have two favorites both from my Grandmothers recipe box. One is the traditional chex mix and the other is her cutout sugar cookies. The cookies and chex mix are must haves from everyone in my family. The cookie recipe is so old that it calls for lard I now use crisco instead and I have to figure out the measurements of the the flour because it was not given on her recipe. So typical of old recipes handed down. They are both yummy, Happy Holidays to all!
ReplyDeleteI grew up in a British household and Christmas dinner meant Christmas Pudding and English Trifle for dessert. I will be making a trifle this Christmas as always:
ReplyDeleteLine a glass serving dish with sliced jelly roll so the spiral of jelly shows. Drizzle about 1/4 cup of sherry over if you like. Over this, spread a can of well drained Fruit Salad (I get the one with extra cherries).
Mix a 4 serving size package of Strawberry or other red gelatin and pour over the cake and fruit. Refridgerate until set.
While the jelly is setting, make up a batch of yur favourite vanilla custard. I use Bird's Custard Powder as it is what I grew up with and is oh, so good! Let the custard cool while the jelly is setting.
Once the jelly is set and the custard is cool, pour the custard over the jelly and make sure it goes right to the sides of the bowl.
Whip up a pint of whipping cream and mound on top of the custard. Decorate with sliced almonds and chopped red and green cherries.
Refridgrate until ready to serve (same day). Enjoy!!

Such yummy looking recipes. My favorite (and a favorite of those who have tasted them), take a Betty Crocker molasses cookie mix and bake as directed on package. Then just melt some vanilla flavored almond bark, or white chocolate chips, and dip half of each cookie in it. Let them set up and enjoy. You can use the gingerbread cookie mix as well.

Gooey butter cookies are a St. Louis tradition and the easiest way to do them is 8 oz cream cheese, 1 stick butter, 1 tsp vanilla, 1 egg, 18 oz yellow cake mix (chocolate works too but yellow is tradition.) mix it all together and chill overnight. scoop out in roll in powdered sugar and bake at 350 for 8 to 10 minutes. My family adores the good old sausage & cheese balls made with Bisquick, grated cheese, and sausage. (Recipe is at home) They're so easy, just take a little time, and I love making them for my Christmas brunch. Your recipe sounds wonderful, and I may include it in my Christmas Eve after-church menu this year. I always have a crock-pot full of chili waiting for family and friends after our service. Christmas blessings to you and yours!
ReplyDeleteI love the traditional Reese's Chewy Chocolate Cookies. Anything chocolate and peanut butter can't be beat. The recipe is on the back of the Reese's peanut butter chips bag.
ReplyDeleteI've read every one of the comments and copied/pasted all the recipes into a word doc to have for later! Thanks for the great recipe Jeanette and the fun way to get more fun recipes!
ReplyDeleteI have two - one was my mothers favorite and we can always remember it because it has 5 things.
Pistaccio Salad
1 can crushed pineapple with the juice.
1 box jello pistaccio jello pudding*
1 container cottage cheese
1 container cool whip*
1 bag mini marshmallows
Mix the can of pineapple with the juice and the pudding mix. Add in the cottage cheese and stir well. Next add the cool whip and stir well. Last add the marshmallows - you may not need the whole bag.
* you can use sugar free pudding mix and sugar free cool whip. I do this for a gal in the office who has type 1 diabetes and this is something she can have.
My 2nd recipe is easy
make your favorite peanut butter cookie dough. I buy the Betty Crocker bag mix and make the dough as directed on the bag.
Roll into balls and put them into a mini muffin pan. Bake as directed.
When they come out of the oven be ready with mini reese's peanut butter cups and shove 1 PB cup into each cookie. Move quickly while they are hot. Let cool for 10-15 minutes - chocolate will still be melty. Remove from pan to cool thoroughly.
You will have PB cookie wrapped around a PB cup in a bit sized treat - watch out you can't eat just 1!
One of my favorites is apple crisp. It only has 4 ingredients which is even better.
ReplyDelete1 can apple pie filling
1 yellow cake mix
1/2 cup butter
cinammon
Preheat oven to 375. In a 9x13 pan spread apple filling on bottom. Sprinkle apples with cinammon. Soften butter and combine with cake mix. It should be crumbly. Sprinkle cake mixture over apples. Sprinkle top with cinammon. Bake for about 15 minutes, until cake is starting to brown. Serve warm with vanilla ice cream.
I can't wait to try the ice cream treat and the custard pie! Now I have choices for what I can bring for the family party rather than worries! :) Thank you all for sharing. My quick fix for sugar cookies: My munchkins didn't like the store bought dough but they LOVE these Cake Mix Cookies
ReplyDelete1 box any flavor Cake Mix (we like rainbow sprinkles)
2 eggs
1/2 Cup Vegetable Oil
Optional add ins:
2 Cups Chocolate Chips
1/2 Cup Nuts
(you can also use dried fruits)
Mix it all together and drop teaspoons onto ungreased cookie sheets at 350degrees for 8-10 minutes.
You can drop the spoonfulls together to make snowmen and decorate them too!
Yummy and fast (for cookies) ;0
Banoffee Pie
ReplyDeleteGraham cracker crust (bought or made), top with one can of dulce de leche, add a layer of sliced bananas, top with real (not canned)whipped cream. Sooo easy, and I'm commanded to bring it to every function.

I made cut-out cookies as a kid and I loved decorating them with frosting and fun sprinkles. I make the same cookies each year, just have improved on my decorating techniques. They work great as gifts!!!
ReplyDeleteI love to make peanut butter puffed wheat squares. They are quite tasty and the peanut butter sets them apart.
ReplyDeleteLots of good recipes! Mine is Pineapple Blueberry Crunch
ReplyDeleteDump a can of crushed pineapple into the bottom of a 9x13 baking dish. Top with 2 cups of frozen blueberries mixed with 1 cup of sugar. Sprinkle with a yellow cake mix. Melt a stick of margarine and drizzle over the cake mix. Top with 1/2 cup chopped pecans. Bake at 350 for one hour or until lightly brown and bubbly. Serve warm or cold with vanilla ice cream or whipped topping. Yummy!
This year, I'm making turtle pie. Fill a graham cracker pie crust with the new seasonal jell-o turtle pudding... top it all off with whipped cream drizzled with carmel and chocolate, sprinkled with chopped walnuts!
ReplyDeleteWe have a new favorite at our house - cool whip cookies. One cake mix any flavor, one egg and 8oz cool whip. Mix together, drop by scant tsp in powdered sugar. Roll to cover and place on baking sheet. Bake at 350 for 10 min. Tons of different flavors to try!
ReplyDeleteYummo!
Your recipe sounds SCRUMPTIOUS and this will be on my list to create in the next couple of weeks! :)
ReplyDeleteSomething our family enjoys as a snack (and we seem to remember this recipe during the holidays)is soft pretzels! I always thought soft pretzels took sooo much time UNTIL a CTMH customer gave me her recipe! YOu can make these in a SNap! :)
1 c. water (115 degrees), 1 T yeast, 1 T brown sugar, 1/4 t salt. Mix together and let it rise for 5 min.
Then add 2 1/2 c. flour Mix well and let rise for 15 min.
After risen, pull off balls of dough and roll them into long snakes and create your pretzel shape, or pretzel sticks. Mix together in a bowl 1 c. warm water adn 2 T baking soda and dip your pretzel shape dough into this mixture prior to putting on a well greased pan. BAke in a 500 degree oven for 5-7 min (until golden brown)
After baking, spread butter and your choice of flavoring over the pretzels. Our familys favorite is pretzel salt and cinnamon & sugar. Enjoy! :)
As a mother of 3 boys & a husband who LOVES sweets, I love making these quick but yummy treats for Christmas! We call them HEAVEN, but they are also known as Rolo Pretzels & Hugs Pretzels. lol
ReplyDeleteRolo Pretzels:
Take mini twist pretzels. Spread on sprayed cookie sheet. Place Rolo candy on top of each pretzel. Put in oven at 250 for 10 min. As soon as they come out, place another pretzel on top! Can dip in almond bark after they set up if wanted.
Hugs Pretzels:
Take the "window" pretzels. Spread on sprayed cookie sheet. Place Hug kisses (white/choc swirl) on top of each. Place in 250 oven for 10 min. Press another pretzel on top. Can dip in almond bark after they set!
White Chocolate Popcorn always has my family reaching for the bowl!
ReplyDeleteWhite Chocolate Popcorn
1. Pop a bag of light butter microwave popcorn.
2. In a microwave safe dish melt one bag of Wilton's white candy melts.
3. Pour melted candy over popcorn and mix until thoroughly coated.
4. Lay coated popcorn out on wax paper to harden.

Oh my goodness Jeanette! I made your totally wonderful dessert for company and everyone raved. It was delicious.
ReplyDeleteMy super simple yet delightfully good receipe is Microwave Caramel Corn. You will never work and slave over a hot stove again.
Get a large brown paper bag from the grocery store and using a hot air popper make one batch of popcorn. In a microwave safe bowl put in
one cube butter,
1 c. brown sugar,
1/4 c light Karo syrup,
1/2 t. salt
Microwave on high for 2 minutes. Add 1/2 t. baking soda and stir then pour over popcorn in the paper bag. Roll down the top of the bag and shake. Put in the microwave on high for 1 1/2 minutes. Shake again and microwave for another minute. Dump out into a bowl.
You are done. That is it. It is totally delicious. You can add nuts to the popcorn if you desire.
Enjoy,
Carolyn
This is a new family favorite. Be prepared to share, unless you want to eat them all!
ReplyDeleteOver the Top Reese’s Peanut Butter Cookies
3/4 cup butter, softened
1 cup sugar
1 cup brown sugar
1 cup peanut butter
2 large eggs
2 tsp vanilla
1 tsp baking soda
1/2 tsp salt
2 1/2 cups flour
1 1/2 cup milk chocolate chips
32 mini Reese’s peanut butter cups, each cut into 4 pieces
Mix the ingredients down to the vanilla. Add soda, salt, and flour. Fold in chocolate chips.
Using and ice cream scoop, scoop dough (these are big cookies). Place 6 scoops of dough on ungreased cookie sheet. Use your hand and slightly flatten each scoop of dough. Cook for 12 minutes at 350.
Remove cookies from oven and lightly press 8 cut up pieces of the Reese’s peanut butter cups over the top of each cookie. Return to oven for 2 more minutes. Cool on baking sheet 2 minutes before placing on cooling rack. I think these cookies are best eaten warm. However, the still taste great the next day. Are best if eaten no later than the day after baking. Makes 18 cookies.
Variation: use mini or regular M&M pieces in place of the Reese’s pieces.
(I like to make the cookies a little smaller, like regular sized. And put just 3 pieces of peanut butter cups on top. It's the perfect amount.)
My families tradition is always finger foods and millions of different kinds of baked goods on Christmas Eve, right before we all load in one car and go light hopping(driving to the best decorated houses). But my most favorite of them all are crab cheese ragoons and rosettes(cookie).
ReplyDeleteThe crab are the easiest though.
1 pkg. wonton wrappers (small squares or big ones cut into 4)
2 boxes cream cheese
1cup crab or imitation.
Mix cheese and crab and place 1 T. In the wonton wrapper. Use some water to seal all four sides together. And fry in 350 degrees till golden.
Chocolate Popcorn is my easy and quick "go to" recipe!
ReplyDeletePop 2 bags of natural popcorn (no butter). Pour into a large mixing bowl and take out all unpopped kernels. Melt 2-3 blocks of White Almond Bark. Pour over popcorn and mix well coating all popcorn. Mix in plain M&M's or other candy of choice. Spread out on wax paper in a thin layer to dry. Break up and serve.
