I’ve been reflecting much this month on everything, it seems. One thing I just don’t like is wasting food. I’m always trying to figure out how to be creative with leftovers. I guess I can still hear my mother talk about the starving children around the world. And like many of you who buy bananas and don’t eat them, I just can’t see throwing them away. So I have a solution for you: the best banana bread recipe in the world. This bread is sweet and moist on the inside with its own sugar coating on the out. It is our favorite family recipe and now I give it to you to try. Even if you don’t like bananas, you will love this recipe. Go ahead and try it—you’ll be glad you did!
Banana Bread
Beat together:
4 eggs
2 cups sugar
1 cup butter
4-6 mashed bananas
Mix together:
2 ½ cups flour
1 tsp. salt
2 tsp. baking soda
Preheat oven to 350 degrees. Add the dry ingredients with the banana mixture and completely mix together well. Pour into 2 standard buttered and floured loaf pans. Bake for 1 hour. Let cool before serving and try not to eat the whole loaf!

did you know that you can freeze bananas in the skin if they get to ripe before you can make bread? i personally hate bananas, but my daughter was raised by a mom who hates waste also. so she passed that info to me when she found out she didn't have to make banana bread at the most inconvient times.

ReplyDeleteIt's funny that you would post this Jeanette. When I buy bananas my kids ask right away if I'll be making them into banana bread if they get too ripe! They much prefer the bread to the actual bananas. Your recipe looks a lot like them one I make, except I put chocolate chips in mine! When it's still warm...it's the yummiest!!! (Afterall, isn't everything better with chocolate???)
ReplyDeleteI keep a gallon ziploc bag in my freezer with bananas in it. I peel them, toss them in, and can pull out what I need when I need them. We use them for banana bread and smoothies mostly. The kids love when I make banana bread - my recipe has butterscotch chips and cherries in it. Yummmmmm.

ReplyDeleteDarn, I only have 3 bananas that need to be used. Maybe I will check with my sister to see if she has any to add to my 3. I will definitely try your recipe. I've been searching for a good banana bread recipe and so far I have not found a winner.

ReplyDeleteLiving in Puerto Rico, I have extra bananas all the time. I do bake a lighter version (boring, I know) but add chopped walnuts and chocolate chips.

My "Nana" was never one to waste food, either, as she raised her family during the depression.
ReplyDeleteOne of her family recipes was "Bug Cake."
She told me it was made from a mash of whatever fruit she had that was "going bad."
The "bugs" were raisins, by the way, not real bugs from bad fruit!
She was a woman who would have appreciated BOTH sides of B&T paper because she would not have to waste a single scrap.

Jeanette - I don't know where it came from, but I have the SAME recipe. I like to add chocolate chips (YUM). Also, I've found this recipe tastes just as good if I reduce the butter to just 1/2 cup and add 1/2 cup applesauce... cuts down a little on the calories (okay, so don't count the chocolate chips) without sacrificing taste.

ReplyDeleteWhen I make my banana bread, I like to cut the butter in half and add applesauce for the missing half...(so, instead of 1 cup of butter, it would be 1/2 cup butter and 1/2 cup applesauce) It's still just as yummy and moist!
