Be a Champion!

Want to have a great day? Want to feel revved up, positive, and balanced? Then listen to your mother, because breakfast really is the most important meal of the day and it absolutely makes you feel like a champion. Off and on throughout my life, I've skipped breakfast--either I was too rushed in the morning, or I didn't think it was important, or I was trying to pare out calories, or some other silly excuse. I found that I consistently regretted my decision to skip breakfast, because it always impacts my energy, focus, and my appetite the rest of the day. These days, breakfast is non-negotiable for me: I don't leave home without it (and yes, I do have a trimmer waistline and more pep to show for it!)

My secret to a great breakfast starts with a great husband. David is an extreme early-riser, beating dawn by several hours (think 4:30 am). Part of his pre-dawn routine includes making a hearty breakfast of scrambled eggs and bacon--and he always makes enough for both of us, even though my stomach isn't ready for business when he eats. But we have a wonderful "warming tray" in our kitchen where he fills a plate and stashes it for me. Honestly, it's one of the simple and happy joys of my day to pull open that drawer--I call it the "magic drawer"--to find a piping hot, tasty breakfast magically waiting for me as though elves have been in the kitchen.

But variety is the spice of life, and one of my other favorite power-packed breakfasts is high-protein oatmeal pancakes. This favorite recipe is adapted from one I discovered in the great book "Body for Life," by Bill Phillips. They're easy to prepare and make the most wonderful, thin, crepe-style pancakes. Here's the recipe so you start of your morning with some of your own:

Oatmeal Pancakes
(prepare batter in blender; I use a Vitamix, which I strongly recommend)
1 1/2 C. egg substitute (like EggBeaters or equivalent)
1 C. cottage cheese
1 C. oatmeal (I prefer old-fashioned)
2 t. sweetener of your choice (agave, honey, sugar, etc.)
1/2 t. vanilla
Pinch of salt

Blend on highest speed until the entire mixture is smooth and completely liquefied. Then pour onto hot griddle to the size cake you prefer. Enjoy them golden brown (me) or dark brown (David). Add a little sugar-free syrup paired with a sprinkle of Molly McButter (me again) or slather on the real butter and drench in pure maple syrup (guess who?). It's your choice! I often make a double batch and keep it in the fridge for up to 3-4 days to make more yumminess in a flash. Enjoy!

  2. Thank you SO much for sharing this!! I have been on my own journey to become healthy for a little over 2 years now and this is something that I have also struggled with. Breakfast IS the most important meal of the day and should also be the LARGEST meal of the day!!

  4. My husband does the same for me in the morning, but leaves my breakfast in the microwave which we have come to call "the food replicator." It's the highlight of my day to open that door to find the magic behind it!

  5. Thank you for this amazing recipe, Jeanette! I love crepes having grown up in a British household where crepes were the food of choice on Pancake Day or Shrove Tuesday. We would eat them sprinkled with fresh lemon juice and a bit of sugar. I could never get enough of them! I am going to try your healthier version with the traditional lemon and sugar!
